About Ayala Brut Majeur

Ayala Brut Manjeur is a Champagne made by Ayala with the Pinot Noir, Chardonnay and Pinot Menieur varieties in a Champagne Grand Cru.

Champagne Ayala dates back more than 150 years. It was founded in 1860 when the son of a Colombian diplomat and a French countess began to make champagne for the most important people in Spain and England. Although is has been part of the Bollinger group since 2005, this winery located in Aÿ (Marnes), in the heart of the Grand Cru, continues to release limited productions that are full of great freshness and elegance.

Ayala Brut Manjeur comes from vineyards planted in soils with the highest classification, both for the limestone soils and the oceanic climate. They use traditional agriculture and the harvest is carried out manually when the grapes reach optimum ripeness.

Ayala Brut Manjeur is made in the winery using traditional methods and an assembly of the three classic Champagne grapes. It is a non-vintage brut with a low dosage of 7 grams of sugar per litre. In the winery, it ages in contact with its lees for 3 years.
