Do you know how many bubbles a glass of sparkling wine contains?

A young and curious French scientist, Gérard Liger-Belair, dedicated himself to finding the answer and calculated that it could be around a million tiny bubbles with a fleeting life that lasts about two to three seconds: a few tenths of a second for them to emerge, one or maybe two seconds for them to rise and finally the moment they pop, that magical moment that is over in a flash, when they release carbon dioxide alongside a bundle of pleasant aromas.

Why are sparkling wines so successful?

The bubbles provide body and texture on the palate and the burst gives a moment of surprise and delight because what would something like a Champagne be without bubbles? Dom Pierre Pérignon, the Benedictine monk who is credited with discovering the most famous sparkling wine in the world had a reaction that told us everything we needed to know: “Brothers, come and see, I’m drinking stars!”

Since then, these bubbly wines have become synonymous with joy and celebration and it is on the last night of the year when you really can’t miss out on a glass of sparkling wine. And before the bells ring, those who like to make sure the new year starts with good luck place a gold ring in the glass of sparkling wine that will be used to toast, because they say that it brings wealth and happiness for the coming year.

1- Segura Viudas Aria Brut Nature.

The Heredad Segura Viudas is a century-old estate with a history dating back to the 11th century. Throughout its life, it has been used for various different things, including a defense tower called the Galimany Tower, which is what one of their sparkling wines is named after. It was in 1954 when they began to focus their work on the estate towards making wines and Champagnes. Year after year, working with traditional methods and with great respect for the vineyard and the environment they persevered and innovated to offer products that have appeared in some prestigious tastings and competitions nationally and internationally.

2- Bohigas Brut Reserva.

Located in Ódena, in the Conca del Río Anoia, Caves Bohigas, is another of Catalonia’s most historic wine estates. Lying in an enclave that is perfect for vine cultivation, this house, Can Macià, is over 800 years old and has 35 hectares of vineyards that give rise to wines and Cavas with unique personalities. This Bohigas Brut Reserva is a clear example of quality and elegance. A sparkling wine with at least 24 months of aging that gives it a fine bubble, and a subtle touch of residual sugar that makes it very pleasant on the palate without losing any freshness. 3- Raventós and Blanc De Nit.

The Raventós family is the longest documented family of winemakers in Europe, who over 21 generations, have created a brand that enjoys a worldwide reputation. They produce sparkling wines in the Conca del Río Anoia that are representative of a very particular terroir. The soils there are filled with marine fossils resting on a limestone rock massif, a composition quite similar to the predominant soils in Champagne; these are vineyards that are biodynamically cultivated with total respect for the environment, which helps to preserve and express the character and identity.

Raventós i Blanc De Nit is an extraordinary example of the elegance and finesse that a rosé can have. It is made in the Champagne style using white and red varieties. It gets its subtle pale pink colour from the Monastrell variety, which also adds complexity. It is elegant and gastronomic, to toast the new year in style.

4- Möet & Chandon Brut Impérial.

Moët & Chandon is one of the most well-known brands worldwide. The name is practically synonymous with champagne. After 150 years, it is still flying off the shelves. The Imperial Brut coupage involves more than 100 different wines, approximately 30% of which are reserve wines. A challenging assembly work to achieve a mature, complex and consistent champagne, with the body of the Pinot Noir variety, the softness of the Pinot Meunier and the delicacy of the Chardonnay. 5- Ruinart Blanc de Blancs Brut.

The history of champagne is closely linked to Benedictine monks and Ruinart is no exception. It is the first Maison de Champagne in history and was founded about 300 years ago by Nicolás Ruinart, inspired by his uncle, Dom Thierry Ruinart, a visionary Benedictine monk. Ruinart has a rich and complex history with a continuous work to achieve excellence and pass on this unique philosophy on the art of living. The Chardonnay variety is the soul of the Maison and it is in this Ruinart Blanc de Blancs Brut, made only with this grape, where it finds its maximum expression. 6- Louis Roederer Cristal.

The story goes that this Champagne was created in 1876 to satisfy the demanding tastes of Tsar Alexander II of Russia. Times were turbulent and the Tsar, fearing for his life, demanded that all the bottles be transparent to make sure they did not have any hidden bombs inside. It was the Flemish glassmaker Louis Roederer who was in charge of designing a Champagne bottle that was made with clear glass and a completely flat base, which since then has been known as “Cristal”. Many consider it the first luxury Champagne in the world, in that it was not available to the public until 1945.

Louis Roederer Cristal is made with the Chardonnay and Pinot Noir varieties and only from excellent vintages. It is a very balanced, complex and mineral Champagne with extraordinary persistence and silkiness. It is certainly an elegant sparkling wine worthy of tsars, queens and kings. A spectacular way to say goodbye to 2019 and elegantly glide into 2020.
