Christmas and Sparkling Meals

Last year we developed a guide to match all kinds of wines during Christmas feasts. Here you can take a look: Wines for this Christmas. This year we will focus on a selection of sparkling wines, that can be enjoyed during any party or celebration, from the lightest and freshest wines that are perfect as an aperitif, to the sparkling wines that have been aged to develop a complex flavor that perfectly matches the more flavoursome dishes.

Welcome: What better way to start the appetizers than with wines made using traditional methods. Fresh primary aromas that entice your appetite before you delve into the main course. Here are a number of examples: Microbio Nieva York from Ismael Gozalo, made with Verdejo grapes in Segovia. Bernabe Navarro Acequión in Alicante, is a wine made from Moscatel de Alejandría (Muscat of Alexandria) a white wine grape with a slightly greater aromatic and floral profile and Loxarel Ancestral A Pèl from the heart of the Penedés which offers a more austere and fresh profile.

Appetizer and starters: We recommend dry sparkling wines that have not been aged so that they still contain a certain fruity character which marries very well with all kinds of dishes. Tarlant Zéro Brut Nature epitomizes this with its fresh, fruity Champagne grape without adding sugar to your meal. This will pair beautifully with a number of seafood dishes.

Main dish: many sparkling wines age over time which adds a complexity and body to the wine that is well suited to the more flavoursome and richer dishes. The freshness provided by the fine bubbles complements flavoursome dishes as a way to cleanse the mouth and lighten the texture of the overall dish. El Gramona III Lustros Gran reserva Brut Nature embodies all of these qualities we have outlined previously.

Desserts: this is the moment when this type of wine has traditionally been drunk. However, on occasions this is not appropriate if you are serving a sweet dessert with a very dry cavas (Brut Nature). The large cava wineries have always offered something that combines perfectly with desserts, as is the case with Llopart Earthly Nectar Semi Dolç. If you are serving a dessert made with red fruits that is possibly a little acidic, a sparkling rosé would pair nicely with the dessert, such as Guilera Brut Rosat Reserva.

Table: here the big sparkling wines are well-suited, the best vineyards and the aged wines. Great wines are transformed by a second fermentation into authentic aged wines. One of the great examples of this is Recaredo Turó d’en Mota 2005. Another of the great cavas that applies this principle to a lengthy aging process are wines such as Enoteca Gramona Brut with the present vintage 2002, still very young with many years ahead of it.

The bubbles often serve as a way to celebrate the season, but they should also complement your Christmas feasts in an excellent way. Enjoy!
