About La Inglesa Fino Pasado
The renowned layer of yeast that forms on some wines, created by yeasts, is a living organism. Like any living entity that develops in this world, it is born, reproduces, and dies. Hence, its designation as biological ageing. Naturally, these cyclical changes, linked to the activity of these microorganisms, have an impact on the wine. In the early years of its youth—when the veil is dense and robust—the yeasts swiftly process the wine's sugars, shielding it from external elements. However, as time passes and it weakens, this yeast layer becomes less dense, eventually vanishing in some instances, leaving the wine vulnerable to oxidation. At this juncture, straddling biological and oxidative ageing, wines reach intriguing points where they embrace subsequent stages without losing sight of their origins. It is precisely at this moment that La Inglesa Fino Pasado finds itself, a particularly special fortified wine. As its name suggests, La Inglesa Fino Pasado is a wine that, at the time of bottling, the flor veil, after 14 years, was already significantly weakened. Almost on the brink of becoming an amontillado, La Inglesa Fino Pasado endures.
The grape used to produce La Inglesa Fino Pasado is Pedro Ximénez, the most cultivated variety in the D.O. Montilla-Moriles, accounting for about 95% of the vineyards. This variety, around whose origin various theories exist, adapts perfectly to the limestone soils of this region in southern Spain where the climate is typically arid. In fact, it is quite the opposite, with periods verging on drought, especially in summer, with temperatures exceeding 30°C. Given these conditions, the survival of the vines would be impossible without the help of the limestone soil, which acts like a sponge retaining water, providing some relief.
In the winery, La Inglesa Fino Pasado is gently pressed to obtain the free-run juice (the first to flow without applying pressure) and is then transferred to the casks where it will ferment and mature. Specifically, bodegas La Inglesa was founded in the 19th century by Diego Estanislao de Alvear y Ponce de León. Upon his death, the estate was managed by his wife, Luisa Rebeca de Ward, and his daughter, Sabina Alvear y War. Hence, its name. Currently, this company, one of the most promising in the area, is under the stewardship of the Doblas Alcalá family, who are diligently working to restore the winery to its former glory.
