About UBE El Reventón

Ramiro Ibáñez is a scholar of the land. His primary mission is to unravel the complexity of the albariza soil—found in the renowned Sherry Triangle. The spotlight now falls on El Reventón, a "unique" vineyard that produces UBE El Reventón, the latest addition to this esteemed oenologist's collection.

Located very close to the Atlantic Ocean, Ramiro ventures with these vines and, under the banner of his winery Cota 45, introduces this saline white wine, brimming with nuances, which is crafted in his winery in Sanlúcar de Barrameda, situated right in Bajo de Guía, at the mouth of the Guadalquivir River. Directly opposite the Coto de Doñana, Ramiro Ibáñez crafts and experiments with his wines in this former ship repair workshop that has been transformed into a winery. Firmly convinced of the potential of the albariza soil, Ramiro focuses on indigenous varieties—including those that are on the verge of extinction—producing highly intriguing wines. He is a true explorer, delving into the vineyards of the Jerez region, tirelessly and persistently until he finds exactly what he needs.

In the case of UBE El Reventón, Ramiro opts for palomino, the true queen of the Jerez region, which thrives in the El Reventón vineyard, located in the pago of the same name (in Sanlúcar de Barrameda), where albariza de tosca cerrada is prevalent. This type of soil is the most common in the region, being a compact marl with a low content of diatoms (microscopic unicellular algae). When dry, this calcareous soil tends to be very hard, but with water and moisture, it becomes much softer, yielding wines with body and volume.

Manual harvesting and spontaneous fermentations with native yeasts are two fundamental practices at Cota 45 and are indispensable during the vinification of UBE El Reventón. It should also be noted that this entire process takes place in old barrels (between 70 and 150 years old), where UBE El Reventón will be vinified and aged. A light filtration and the addition of a minimal dose of sulphur will suffice to bottle UBE El Reventón.
