About Parés Baltà Ros de Pacs Rosat

Parés Baltà Ros de Pacs Rosat is a rosé organic wine of D.O. Penedès produced by Parés Baltà, a winery located in Pacs del Penedès, in the municipality of Alto Penedès (Barcelona).

It is a family-run winery that has been cultivating in the area since 1790. The current owners belong to the 3rd generation of the family, who, despite the changes they have had to face, continue to carry out organic and biodynamic cultivation. The winery does not use chemical products- It also has sheep to fertilise the fields and benefits from the bees to pollinate the grapes.

Parés Baltà Ros de Pacs Rosat is made with the red varieties that have best adjusted to the area of Pacs del Penedès, the garnacha,  the syrah and the cabernet sauvignon. These come from the farm Finca Parés Baltà located 230 metres above sea level.

For the production of Parés Baltà Ros by Pacs Rosat, the fermentation is carried out at a controlled temperature of 16°C in stainless steel deposits for 2 weeks. This process is interrupted in order to preserve a certain level of residual sugar.

Precisely, this interruption in the vinification process is what characterises the elaboration, resulting in a good organic rosé wine with a slight sweetness.

2023

Ros de Pacs 2023 boasts an enticing pale pink hue. On the nose, it is distinguished by its elegance, with aromas of wild strawberries and hints of ripe banana, accompanied by subtle creamy notes. On the palate, it is luscious due to its good acidity, imparting a savoury and lingering character. Its progression is highly aromatic, with recurring red fruit aromas and creamy undertones, all presented in a fresh and pleasant profile.                       
2014 It exhibits a smooth and crisp character. There is a fascinating harmony between the acidity and the subtle sweetness of the residual sugar.

2013 This wine is smooth and fresh on the palate. Interesting balance between the acidity and the slight sweetness from the residual sugars.
